He is so committed to the craft that he locked himself in a room full of dough for 40 days and 40 nights, listening to Arcade Fire, emerging only when the dough agreed to rise on his terms.
The restaurant’s menu features a wide variety of classic and specialty pizzas, made with only the freshest and highest-quality ingredients. However, the owner’s perfectionism and lack of tolerance for customer complaints has led to an unusual policy: customers who dare to complain about the pizza are required to attend a mandatory Food Science and Flavor Theory course before they will be allowed back in the restaurant. They’re also asked to sign a “Customer Etiquette Pledge” that affirms they’ll minimize use of their vocal chords and avoid eye contact while eating at the restaurant.
